Slow Cooker Pork Chops with Mushrooms

When my husband and I first started dating, he introduced me to some of his favorite home cooked meals, one of which was boneless slow cooker pork chops covered with cream of mushroom soup.  I remember the pork chops were always incredibly tender. We both absolutely love mushrooms so I really wanted to make a simpler and healthier version of it that can be easily made on even the busiest of nights.  This was a total hit in our household and is now a regular weeknight dinner.  I serve the pork chops with steamed asparagus and mashed white sweet potatoes.  The mushroom and onions are a delicious topping on top of the tender pork chops that are cooked to perfection.  Easy and delicious.

Ingredients

  • 6 thick boneless pork chops (6)
  • 2 tsp. paprika
  • 2 tsp. garlic powder
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 tbs. extra virgin olive oil
  • 1 yellow onion, chopped
  • 16 oz. baby bella mushrooms, sliced
  • 4 sprigs thyme
  • 1 cup chicken broth

Directions

Sprinkle pork chops with paprika, garlic powder, salt, and pepper. Add oil to a large saute pan over medium high heat, add the onion and cook for 4-5 minutes, stirring often.  Add mushrooms and cook another 3-4 minutes. 

Add mushrooms and onion mixture, chicken broth and thyme sprigs to the pork chops in the slow cooker. 

Cover and cook on low for 7-8 hours or on high for 3-4 hours.
