I love ordering chicken fajitas when I go to Mexican restaurants and I make them at home quite often. I love that the whole family enjoys them and are easily customizable with a variety of toppings. These easy and simple slow cooker chicken fajitas are incredibly flavorful and cook to perfection in the crockpot. Perfect on busy weeknights as they come together in only 15 minutes with spices and seasonings that you already have in your pantry.
Ingredients:
- 2 lbs. boneless, skinless chicken breasts, sliced into strips
- 1 yellow onion, sliced
- 1 red bell pepper, deseeded and sliced
- 1 yellow bell pepper, deseeded and sliced
- 1 cup red salsa
- 2 tsp. chili powder
- 2 tsp. garlic powder
- 2 tsp. paprika
- 2 tsp. oregano
- 2 tsp. salt
- 1 tsp. pepper
- 1 tsp. ground cumin
For serving: Tortillas, lettuce, shredded cheese, tomatoes, jalapenos, fresh chopped cilantro, and lime juice
Directions
- Place chicken breasts, onion, bell peppers, and salsa.
- Sprinkle with chili powder, garlic powder, paprika, oregano, salt, pepper, cumin, and stir well.
- Cover and cook on low for 4-5 hours or on low for 7-8 hours.
- Serve on your favorite tortillas, lettuce and sprinkle with your favorite toppings.
