My mom has made this easy cabbage and tomato soup for as long long as I can remember. She always makes it on the stove top but I thought it could easily be adapted to the slow cooker and I was completely right. This slow cooker cabbage and tomato soup is light and can be thrown together in a matter of minutes. Ingredients:
- 1/2 medium cabbage, sliced thinly
- 4 carrots, peeled and chopped
- 4 celery stalks, chopped
- 1 15 oz. can dicd tomatoes
- 1 15 oz. can tomato sauce
- 6 cups vegetable broth
- 1 bay leaf
- 2 tsp. salt
- 1 tsp. pepper
- Optional: Fresh chopped parsley for serving
Directions:
Add all ingredients to 5-6 quart slow cooker. Stir well. Cover and cook on high for 4-5 hours or on low for 8-10 hours.
