Slow Cooker Cabbage and Tomato Soup

My mom has made this easy cabbage and tomato soup for as long long as I can remember.  She always makes it on the stove top but I thought it could easily be adapted to the slow cooker and I was completely right.  This slow cooker cabbage and tomato soup is light and can be thrown together in a matter of minutes.  Super savory and delicious,     this version of cabbage soup is great for lunch, dinner or a healthy snack.  Budget-friendly and packed full of nutrients, you truly can’t go wrong.

Ingredients:

  • 1/2 medium cabbage, sliced thinly
  • 4 carrots, peeled and chopped
  • 4 celery stalks, chopped
  • 1 15 oz. can dicd tomatoes
  • 1 15 oz. can tomato sauce
  • 6 cups vegetable broth
  • 1 bay leaf
  • 2 tsp. salt
  • 1 tsp. pepper
  • Optional: Fresh chopped parsley for serving

Directions:

Add all ingredients to 5-6 quart slow cooker. Stir well. Cover and cook on high for 4-5 hours or on low for 8-10 hours.
